As I sit here with my breakfast of scrambled eggs, chocolate chip toast with peanut butter and a glass of OJ and Sabrina the teenage witch on in the background I realize that I need to get out of my comfort zone. I used to be afraid of change and new things. Like when I worked at the kennel for 2 1/2 years and it took my current boyfriend to push me to find a better job and I was afraid but I did it and couldn't be happier where I am right now.
Any who this isn't that serious of a topic but it has to do with my baking. I have been printing off Pinterest recipes lately for baking and cooking but I am trying to go out of my comfort zone of just baking muffins, cookies, and brownies. I've always been afraid of using yeast and I made homemade wheat pizza crust the other day and it came out okay not exactly what it probably should have looked like. So I want to start to work with that more and just try different things like more breads and cakes and pie. I just need more people to share all the food with.
I made dinner every night this week starting with homemade pizza, then ham and potato soup in the slow cooker, then grilled cheese with tomato pesto and turkey, then zucchini and pasta with basil pesto sauce and last night was homemade sloppy joes using ground turkey and everything came out amazing all week. Tonight is pork chops and still trying to figure out what I want to bake this weekend since I try to bake one to two times a week. I made skinny brown sugar oatmeal muffins Tuesday and they are so delicious. Its great to be able to come home to cook a meal and it turn out right and they haven't been that hard to make or maybe I'm getting better? ha
The boyfriend and I are appliance looking today so when spring comes and its time to build the house everything will be picked out. I told him he needs to organize it in a binder by room and print out the things he wants such as floors appliances lighting etc for reach room and then he will be ready to go in spring. Last night he found a wall oven that has a built in meat thermometer where you can stick it in the meat in the oven and it reads on the outside. I got so excited. That should tell you about my life when I get excited over a built in meat thermometer. Since he got the land for cheaper than asking price we have extra money to put towards a really nice kitchen and we agreed on a mid grade bathroom and bedrooms and living room aren't really as important. Just slap some paint on those rooms and call it good. I just want a closet. But we will definitely be poor during this process. Well more so him because I am already poor. Either way its exciting I have always wanted to design the inside of a house.
Just a random photo of me from a year or so ago. Really liked that hair cut but it was annoying once the bangs started growing out. Still have that shirt I got from Old Navy and get compliments on it ALL the time still.
Have a good day everyone! I'm enjoying my day off from work because my windshield wipers snapped of this morning from the sheet of ice on my car and since it was freezing rain snowing I kind of needed them so got to stay home but don't feel bad because the roads are horrible and there was only like 2 appointments today.
