NOOO not the gluten....!!
I have had GI issues for over a year now, tolerable, but annoying and getting tired of carrying around meds all the time like a 60 year old. I just had my physical this week and was talking to my doctor about trying to change my diet drastically well drastically for me. We have done tests to see if it was other things but it all came back normal. So the next logical step would be a food intolerance. So first thing is to cut gluten out. She told me I would notice or not notice a difference in two weeks but dairy can also cause the symptoms I have and my coworker who is allergic to both said that dairy and gluten allergies come hand and hand. Great my two favorite things in the world.. sigh
I will be starting my gluten free trial starting Monday. It is going to double my grocery bill and take me 5 hours to go grocery shopping checking everything for gluten..ugh. Also its going to take me half a day to meal plan ahead of time. I hope its worth it. I went to whole foods today for my salad dressing and bought Schar Multigrain Bread-Gluten free. $7 for a puny loaf with slices the size of my palm. ill need like 2 sandwiches. I don't know why all gluten free bread is tiny like come on. figure out a way to make it normal size. I made a peanut butter and jelly for dinner after toasting the bread. The bread wasn't horrible and it was really sturdy? bread. Did not fall apart at all. Almost sourdough texture like. Anyway hopefully I can find it cheaper at another store.
Finding good gluten free pasta will be the hard part as its almost impossible to find it. Its like a unicorn apparently.
Anywho I will also be starting physical therapy next week because of the muscle strain last year on my shoulders that never really healed. My shoulders are not the same anymore.
I will be blogging my gluten free journal. An entry every day as I hit a big caloric cut too and must find food that is gluten free and filling. I got this!! but my bank account don't :(
Going home this weekend to see my parents and go apple picking with my mom and best friend Sarah. YAY:) The weather should be good too.
